In my twenty-plus years of tending bar, I’ve collected quite a few recipes for all kinds of cocktails -- drinks I’ve learned from colleagues, from places I’ve worked, and from elsewhere. The cocktails described here are just the tropical cocktails, and by that we mean drinks with tropical fruit flavors and, for the most part, made with rum. This is by no means a definitive list, and some of the drinks here (like the Mai Tai) have more than one popular recipe.
